Alternative to ESPink 3.6 for US builders

Inkora currently uses the LaskaKit ESPink 3.6, which works very well for the project, but it can be difficult and relatively expensive to get in the United States because of international shipping. It would be great to support an alternative ESP32-S3 e-paper board that is easily available from a US retailer and works with the same 7.5" e-paper display and battery.
